Frankie Basket

Ingredients:

  • 2 large tortillas (whole wheat or regular)
  • 2 cups mixed salad greens (such as lettuce, spinach, arugula, or kale)
  • 1 cup cooked quinoa or couscous
  • 1 cup mixed vegetables (such as bell peppers, cucumbers, tomatoes, onions, and carrots), thinly sliced
  • 1/2 cup crumbled feta cheese or your favorite cheese
  • 1/4 cup hummus or your favorite dressing
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing the skillet

Instructions:

  1. Heat a non-stick skillet over medium heat and lightly grease with olive oil or cooking spray.
  2. Place one tortilla flat on the skillet and let it heat up for about 1 minute.
  3. Sprinkle half of the crumbled feta cheese evenly over the tortilla.
  4. Add half of the mixed salad greens on top of the cheese, followed by half of the cooked quinoa or couscous, and half of the mixed vegetables.
  5. Drizzle half of the hummus or dressing over the vegetables and season with salt and pepper to taste.
  6. Place the second tortilla on top of the filling and press down gently with a spatula.
  7. Cook the Salad Frankie Basket for about 3-4 minutes on each side, or until the tortillas are golden brown and crispy.
  8. Carefully transfer the Frankie Basket to a cutting board and let it cool for a minute before slicing into wedges.
  9. Repeat the process with the remaining ingredients to make another Salad Frankie Basket.
