Wheat Pancake

Ingredients:

  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon honey or maple syrup
  • 1 cup milk (dairy or non-dairy)
  • 1 large egg
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract (optional)
  • Additional butter or oil for cooking

Instructions:

  1. In a large mixing bowl, whisk together the whole wheat flour, baking powder, and salt.
  2. In a separate bowl, whisk together the honey or maple syrup, milk, egg, melted butter or oil, and vanilla extract (if using).
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it’s okay if there are a few lumps in the batter.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake and the edges start to look set, about 2-3 minutes.
  6. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.
  7. Repeat with the remaining batter, greasing the skillet as needed.
  8. Serve the whole wheat pancakes warm with your favorite toppings, such as fresh fruit, maple syrup, yogurt, or nut butter.
